– 6 fresh Anaheim chile pepper – 1 (8 ounce) package queso asadero (white Mexican cheese), cut into 3/4-inch thick strip – 2 large eggs, separated – 1 teaspoon baking powder – ¾ cup all-purpose flour – 1 cup vegetable shortening for frying
In order to prepare the oven broiler, place the oven rack approximately six inches below the source of heat.
After placing the peppers on the baking sheet that has been prepared, broil them for approximately ten minutes.
Peppers should be rotated frequently with tongs in order to sear both sides.
After the peppers have been blackened, place them in a bowl and cover it securely with plastic wrap.
As the peppers cool, allow them to steam for around fifteen minutes.
To remove the seeds and the core from peppers, first peel the skin from each pepper, and then make a slit.
The peppers should be washed both inside and out, and then dried with paper towels.
